When you hear chocolate chip cookies, tasty is something that always comes to mind, but healthy?
Although it sounds like an impossibility or an idea concocted in our dreams, it was worth a try!
I don’t know if we have ever seen our group of students as excited as when they heard we were making chocolate chip cookies yesterday. Of course, they were thinking tasty!
The excitement level dropped when they found out these cookies were made with a sweet potato and bananas. They may have been skeptical about them, but when they tried a cookie...they were in love!
For those of you that never thought you would see the words healthy and cookie together...this is the recipe for you!
Recipe: Healthy Tasty Chocolate Chip Cookie
1 cup peanut butter
1 cup mashed sweet potato
1 tsp baking powder
1 cup chocolate chips
Cook sweet potato in the microwave for 8 minutes. Make sure to poke holes in the skin or the potato could explode. Let potato cool and mash. Preheat oven to 375 Degrees. Place parchment paper on cookie sheet. Place eggs, peanut butter, mashed sweet potato, and bananas into a blender or food processor and blend till smooth. Pour into a bowl. Stir in baking powder and chocolate chips. Using a tablespoon, scoop the batter onto cookie sheet and place in oven. Cook for 18 minutes or until they are browned and firm. Take the cookies out and place on a cooling rack.
