Well that was fun! Last week we made pancakes and they were the most popular snack yet. This healthy take on a traditional treat only needs three ingredients: eggs, bananas and baking powder.
- 2 bananas
- 4 eggs
- 1 tbsp. baking powder
With a whisk, mix the eggs and add baking powder. Just like magic, the eggs will get very fluffy. The students enjoyed this step! Place the egg mixture and bananas in a blender and blend. Oil or butter a frying pan on medium heat. Pour batter into the frying pan (small pancakes work best). Heat until bubbles form, flip and cook the other side for one minute. These delicious, healthy pancakes will fool any pancake enthusiast.
If you're feeling creative, try adding cinnamon, cocoa, raisins or blueberries to your batter. It's hard to go wrong with a pancake.
